Green Eggs & Ham

“I do not like green eggs and ham.”
First-graders in the Evergreen Public Schools along with family members enjoy a free breakfast of green eggs and ham to celebrate the March 2nd birthday of children’s book author Dr. Seuss. The breakfast is a tradition started many years ago by Mark Matthias, owner of Beaches Restaurant & Bar. When Matthias first started making the breakfast, he and his volunteers cracked real eggs. Now, to save time, they use liquid eggs and add green food coloring. The food is prepared by volunteers in the kitchens at Beaches and the Firstenburg Community Center. Then volunteers deliver and serve the food to the students and families.
Each first-grade student in the Evergreen Public Schools also receives a Dr Seuss book distributed by the Evergreen School District Foundation.
The Green Eggs and Ham breakfast intersects with Dr. Seuss’ birthday and the National Education Association’s Read Across America Program.
